So far I haven’t travel a lot of places but wherever I am travelled haven’t seen heaven like Varanasi. The Ganga Ghaat here is amazing, there is a lot of peace here. Not only this, Varanasi is also a perfect place for food lovers. The streets of Varanasi are full of different varities of delicious street foods. One of such delectable item is Aloo Tamatar Chaat, one of my favorite recipe. Whenever I want to eat something like chatpata (spicy with different flavors), I always prefer this Aloo Tamatar Chaat full of spices over anything. I love to cook it, eat it and to serve it to family. My family waits eagerly to serve this chatpata chaat to them by me.

What makes Aloo Tamatar Chaat special?

Aloo Tamatar Chaat is a mix of potatoes, tomatoes and amazing different varieties of spices which create a burst of flavors in every bite. Just close your eyes and imagine a single bite of it in your mouth….it seems like wow! Isn’t your mouth flooded?

This Aloo Tamatar Chaat represents the rich and diverse food traditions of city Varanasi. So let’s get started with the ingredients.

Ingredients

To make this delicious Aloo Tamatar Chaat, we will need:-

  • Potatoes:  4 medium sized
  • Tomatoes(red and juicy):  5-6 ,finely chopped
  • Onion:  1 medium size, finely chopped
  • Green chili:  3,finely chopped
  • Cumin seeds: 1 tsp
  • Ginger paste:  2 tsp
  • Poppy seeds(posta dana):  1 tsp
  • Black salt:  ½ tsp
  • Turmeric powder:  1 tsp
  • Cumin powder: 1 tsp
  • Coriander powder:  1 tsp
  • Red chili powder: 1 tsp
  • Garam masala( mixture of black pepper, cardamom, cinnamon,  cloves, coriander, nutmeg, and turmeric):  1 tsp
  • Chaat masala:  1 tsp
  • Tamarind pulp:  3 tbsp
  • Ghee:  2 tbsp
  • Salt:  according to taste

Ingredients for sweet syrup

  • Water:  1 cup
  • Coriander powder(roasted):  1 tsp
  • Sugar:  ½ cup

For garnishing and serving

  • Fresh coriander leaves(chopped)
  • Cumin powder
  • Chili powder
  • Ghee:  1 tbsp
  • Sev, crushed papdi or any namkeen
  • Lemon juice:  1 tsp
  • Lemon wedges

How to cook ?

First of all make the syrup

  • Take one cup water in a pan and boil it.
  • Add 6 tsp sugar to it.
  • Add 1 tsp roasted coriander powder.
  • Boil the mixture until it becomes ½ cup of thick consistency.
  • Syrup is ready; remove the pan from the flame.

Let’s prepare the chaat

1-Boil the potatoes in the pressure cooker and then crush it.

2-Take a large pan, heat it.

  • Add 2 tbsp ghee, let it be heat over low-medium flame.
  • Add cumin seeds and then poppy seeds, roast it.
  • Add finely chopped green chili, onion, and then ginger paste into it. Stir it well until the onion turn golden brown.

3-Cook the tomatoes

  • Add the chopped tomatoes to the pan.
  • Add black salt ½ tsp.
  • Then add 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp roasted coriander powder, 1 tsp roasted cumin powder and salt (according to taste), and mix all of these very well.
  • Cook until the tomatoes become soft and mushy.
  • Add ½ cup water to cook tomatoes and wait until it looks like semi-liquid.

4- Add tomatoes

  • Add the boiled and crushed potatoes to the tomato mixture in the pan.
  • Stir it until tomato, potato, and spices mixed well.
  • Cook it another 10 minutes, to blend the mixture with different flavors.

5-Add tamarind pulp

  • Add tamarind pulp to the mixture. This tamarind pulp will give signature flavor to the chaat.
  • Sprinkle garam masala and chaat masala over the mixture stir it very well.
  • Cook for 2-3 minutes and switch off the flame. Remove the pan from the flame.

The Varanasi Aloo Tamatar Chaat is ready.

Garnishing and serving

  • Transfer the Aloo Tamatar Chaat into a serving dish.
  • Add 1 tbsp ghee over it.
  • Add tamarind juice into it.
  • Sprinkle some red chili powder over it.
  • Garnish with finely chopped onion and freshly chopped coriander leaves.
  • Squeeze 1 tsp lemon juice in it.
  • For crunchiness, add sev, crushed papdi or any namkeen on top of it.
  • Serve it with lemon wedges.

Tips for Aloo Tamatar Chaat

  • Ensure that the potatoes are boiled very well, the inside part should not be uncooked.
  • Use the amount of green-chili, red-chili powder and salt according to your taste. It is not necessary that the taste that I have exactly matches your taste, so modify it according to you.
