Butterscotch egg-free ice cream

The ice cream whose name is heard makes everyone’s mind cool. I love the ice cream over any dessert. Till now I have eaten many varieties and flavors of ice cream but there’s no one like butterscotch ice cream. This one is my favorite. I also love the pineapple flavor but today I will share with you all about butterscotch ice cream. In next upcoming blogs I will share pineapple flavor ice cream with you.
So let’s get started with the ingredients.
Ingredients
Butterscotch crunch
- Sugar: ½ cup
- Butter: 1 tsp
- Almond: 2 tbsp(chopped)
- Cashew nuts: 2 tbsp(chopped)
Prepare ice cream base
- Milk: 1 cup
- Sugar ¼ cup
- Milk powder: 2 tbsp
- Corn starch: 1 tbsp
- Whipped cream: 2 cup
- Sugar powder: 2 tbsp
- Butterscotch essence: 1 tsp
- Lemon food color: 2-3 drops
How to prepare this dessert ?
Firstly prepare butterscotch crunch
- To make this, take a pan and put it over on a low-medium flame.
- Pour ½ cup sugar into a pan.
- Let melt the sugar and slowly stir it with spatula.
- Add 1 tsp butter into it. This will give flavor to the crunch.
- Add 2 tbsp chopped cashew nuts and 2 tbsp chopped almond into it.
- Stir it for 30 seconds on low flame.
- Switch off the flame.
- Take a steel plate and apply oil over it.
- Transfer the above mixture into this plate spread it well.
- Let it be cool for at least 10 minutes
- After 10 minutes take out the caramel crunch and crush it with the help of rolling pin. (Do not blend it into the jar or mixer, otherwise it becomes powder and it not give the crunchy effect).
Now prepare ice cream base
- Take a bowl and add 1 cup thick consistency milk (full fat milk).
- Add 4 tbsp sugar into it.
- To make ice cream creamy very soft, add 2 tbsp milk powder. Milk powder absorbs water content of milk.
- Add 1 tbsp corn starch (corn flour) into it, so that the mixture becomes very thick and it also helps in binding. (If you don’t have corn starch then in place of it, take 2 tbsp butterscotch flavor custard powder)
- Take a whisker and mix all of these very well. Ensure that there are no lumps left inside it.
- Now switch on the flame at low-medium and put the pan over it.
- Transfer the above prepared mixture into the pan. For at least 4-5 minutes, stir the mixture continuously. Cook the mixture until it becomes like thick consistency. (This thick consistency comes due to milk powder and corn starch that we have used).
- Let it be cool.
- Transfer the mixture into a bowl and keep it in a freeze for one hour.
- Take 1 cup whipped cream and whipped it with the electric beater. If you don’t have electric beater then use whisker in place of it).
- Add 2 tbsp sugar powder into it (according to your taste).
- Now add the mixture (which was kept I freezer before 1 hour) into it.
- Add 1 tsp butterscotch essence into it.
- Add 2-3 drops lemon food color into it.
- Again mix all the things very well with the help of electric beater. (In place of electric beater you can also use mixer to mix it well).
- Now add butterscotch crunch into it. Mix it well into the cream.
Freezing
- Transfer the ice cream into the air tight container.
- Sprinkle some butterscotch crunch over it.
- Freeze it for 7-8 hours at least.

Serving suggestion
- Scoop out the ice cream into a transparent glass bowl.
- Sprinkle some crushed nuts, butterscotch crunch and chocolate chips over it.

The delightful ice cream is ready to eat.
